Pixellation in moving QTVR, can it be improved?

Hello,
 
I've done my vrs mainly in Java and Flash before. I've been working on some for a client who wants them in QT. Does anyone know how to start the vr in a particular place using QT, i.e this one I'm working on starts off looking at a load of undergrowth, when ideally I'd like it starting looking at the building.

Hope someone can help, I've been working on this all day with NO progress! Also, my file size is large, and I dont seem to be able to bring it down much more without loss of detail etc.

Centering a panorama
You can also set the horizon in relation to any image in the panorama. Select any image you want to center in the panorama and do one of the following:  
 
Select View > Look At.
 
Press = to center it in the Stitching Window.  
 
Right-click (Windows®) or Ctrl+click (Mac®) in the Stitching Window or the Thumbnail View and select Look At from the contextual menu.
 
The view is repositioned to look directly at the selected image. When you render the panorama the X- and the Y-axes are set relative to the borders of this image.

That came through the help screen.   When you are building your panorama and have all of your photos loaded highlight the single photo you want to be the center of your panorama and hit the equal sign.  If you are converting a panorama this does not work.

Thanks again, I am rendering as Cubic QTVR and it seems to lose the information somewhere, but will have another go today.

Erika-did you ever get this to work in QT?  I have been trying to do the same thing.
 
BTW-that is a gorgeous panorama!
