finding 30 degree pitch

I'm using a Canon EOS 1DS with a 16mm rectilinear lens to create panoramas.  How do I caluculate what the pitch of my lens should be assuming I'm going to take 18 images (8 at every 45 degress at plus ?? degree pitch, 8 at every 45 degress at minus?? degree pitch; and one each at 90 degrees and -90 degrees) to stitch together for the pano.  
 
Does the pitch (plus and minus) need to be accurate?    Is there a tool available to accurately calculate the pitch of my lens or is this unnecessary and can I just eyeball it??

You need a rotator like the Nodal Ninja 5 or 360 Precision Adjuste or Absolute
