Dumb question: how to rotate a single image

I'm embarrassed to ask this, but here goes anyway:
 
In the past I've only done cylindrical panoramas with the camera set level--no up or down shots. This time I thought I'd try doing a cubic or spherical panorama, going all the way around at an angle of -20 (six shots with a 10.5 mm lens on a Nikon D300), doing one or two up shots, and putting a logo over the tripod at the bottom. However, when I load the six around shots into Stitcher, each is at an angle to its neighbors, and I can't figure out how to rotate a single image to align it with its neighbor.  
 
I've tried the "Roll" option in the "View" menu (I'm using Stitcher 5.1), but I can't get it to rotate just a single image; it seems to want to rotate every shot currently active in the stitching window, which is not what I need. I tried also to look this topic up in the on-line Help files, but I get an error message for everything beyond the first couple dozen pages.
 
So can somebody please explain to me what I need to do to align and stitch a set of shots all done at an angle other than 0?  
 
While I'm at it, two related questions: using this approach, do I need two up shots at right angles to each other to get complete coverage of the top of the panorama? Am I better off just doing six around at an angle of 0 and then one up and one down?

Lots of questions, here's some answers:
 
1. Using Stitcher 5.1 and the Nikon 10.5mm you will need to "de-fish" your images first before you can stitch them. I suggest you consider the upgrade to 5.6.1 so you can then load and stitch your images directly inside Stitcher.
2. With the D300 and Nikon 10.5mm you need 6 shots horizontal plus one shot up (zenith) plus either: 2 shots down (nadir) if you are using a rotator with a vertical arm or one shot down if you are taking it hand held.
3. If you have an image loaded into the interface and it's at a different rotation to the others, RIGHT CLICK the image thumbnail in the image strip and select the rotation required.

Thanks for the reply, badders. I'm using Nikon Capture NX to "de-fish"; the extra step involved is a bit of a pain, but if it saves me the cost of upgrading to Stitcher 5.6, I'll continue to do it that way for now.  
 
As for rotating a single image, can you tell me how to do it on a Mac? My mouse doesn't have right and left buttons.

From the menu select EDIT - ROTATE then the value you want.
