Well, looks like they did it A LA Matrix.
Basically what they did was place about 100 or so cameras in an arc around the guy. Had them roll all at the same time and had the action run real time.
There is no actual slow motion going on. For the water explosion, they simply used the same image from different cameras. So that way, it seems as if the camera is "moving" but in actuality the video is stopped, we are just seeing the same image from different angles.
